Well like most excursions, the wonderful driver from Jungle Trekking Adventures and Safaris Inc (JTAS) (www.experiencescaribbean.com) came to pick us – my fellow Caribbean cookers and I – up in one of those big conventional vans. He quickly figured out it would probably be easiest for me to ride in the front passenger seat with him. He drove us to the beautiful home of our guests and the owners of JTAS, Daria and Michael Eugene, high on a hilltop and surrounded by beautiful tropical trees.

If you like Caribbean Food why not get involved and take a Caribbean Cooking Class with Cooking Caribbean? The JTAS Experience takes you to Daria’s house and kitchen not far from Roseau where she’ll teach you to cook local Caribbean foods such as Titiri Fishcakes, Plantain, Rice and Beans.

Despite our love of hiking and exploring the outdoors, M and I were intrigued by a cooking class that we found when researching things to do in Dominica. Booking the class ended up being a great decision for multiple reasons. First of all, it was fun, informative, and delicious. Secondly, our day in Dominica was gray and drizzly, and spending a few hours learning about Caribbean cuisine in a roofed but open kitchen was the perfect antidote to the weather!

Cooking with Daria was fantastic! Daria is engaging and fun, organized and efficient. She shows you the ingredients, how to prepare them, and involves everyone in some part of the cooking process (she has most items already prepped, so you spend the time just doing the actual cooking). She gives tips on how to cook the different items. She presents a 'show and tell' of the raw form of all the different spices used, as well. Everything was so flavorful. And she provides samples of spiced rums (from local ingredients). You can even purchase a bottle full of spices to 'make your own' rum (we bought a bottle and our rum is 'steeping' as I type!).

When you're done, you can walk in her beautiful yard to see cilantro growing wild, like grass. Or check out a cinnamon tree. Or any of the other colorful plants and flowers growing. Her view of the Caribbean is heavenly! On the drive up from Roseau, you pass through the busy town then your ears pop, vegetation replaces houses, the temperature drops a bit and then you arrive, passing a pineapple farm along the way. Lovely!

Everyone in our group (including two husbands) enjoyed this class. This trip would be perfect for groups of all ages who enjoy food and are tall enough to reach the stove top :)
